Vegan Pasta Salad Stuffed Shells
SERVES 6-8 | FINISH IN 35 minutes

  • 12 Ounces Jumbo Shells
  • 1 red bell pepper, small diced
  • 1 orange bell pepper, small diced
  • 1 cup chickpeas
  • 1 cup quartered cherry tomatoes
  • 1/2 cup vegan feta
  • 1/2 cup quartered mixed olives
  • 1/3 cup diced cucumber
  • 1/4 cup small diced pepperoncini or banana peppers
  • 2 tablespoons chopped fresh basil or parsley
  • ¾ Cup Organicville No Added Salt Italian Dressing
Products you'll need
  1. Cook the shells according to the package instructions. Drain and rinse with cold water to cool the pasta.
  2. Meanwhile, toss the remaining ingredients in a large bowl.
  3. Stuff each shell with several spoonfuls of the salad mixture.
  4. Drizzle with more Italian dressing to serve.  Enjoy!
