Now for the ingredients: every cobb salad needs bacon. For this vegan version, we made homemade coconut bacon, which provides the same crunch and smoky flavor. This bacon contrasts nicely with the crisp romaine lettuce base.
Thankfully, it’s also pretty easy to make! The marinade is made with ingredients like soy sauce, garlic powder, onion powder, and liquid smoke, which is the key ingredient for making it taste like bacon. Simply whisk everything together, coat the coconut flakes and get them in the oven until they’re nice and crispy. It’s hard not to eat them all straight from the pan!
To make this salad nice and hearty, we’ve added chickpeas to replace chicken. Avocado also adds a bit of heft. The corn, cherry tomatoes and red onion add a nice fresh bite to the salad that balances great with the other ingredients.
One of the best parts about this salad? It can be meal prepped days in advance. Simply cut up all the ingredients in advance and toss them together when ready to serve. Since the dressing is already made, it can just be drizzled on top with the fresh avocado the day of serving.
