Vegan Pasta Salad Stuffed Shells
Ingredients
- 12 Ounces Jumbo Shells
- 1 red bell pepper, small diced
- 1 orange bell pepper, small diced
- 1 cup chickpeas
- 1 cup quartered cherry tomatoes
- 1/2 cup vegan feta
- 1/2 cup quartered mixed olives
- 1/3 cup diced cucumber
- 1/4 cup small diced pepperoncini or banana peppers
- 2 tablespoons chopped fresh basil or parsley
- ¾ Cup Organicville No Added Salt Italian Dressing

- Cook the shells according to the package instructions. Drain and rinse with cold water to cool the pasta.
- Meanwhile, toss the remaining ingredients in a large bowl.
- Stuff each shell with several spoonfuls of the salad mixture.
- Drizzle with more Italian dressing to serve. Enjoy!
