  • 6 medium beets
  • 4 c. baby spinach
  • 1/3 c. blueberries
  • 2 oz. goat cheese
  • 2 tbsp. pepitas

Directions

  1. Preheat the oven to 400° F.
  2. Wrap each beet in foil and bake for 45-50 minutes, until they are fork-tender. Let cool.
  3. Assemble the salad by placing a bed of spinach into two bowls, top with sliced beets, blueberries, crumbled goat cheese, and pepitas. Drizzle with Organicville® Balsamic with Olive Oil Vinaigrette.
