- 6 medium beets
- 4 c. baby spinach
- 1/3 c. blueberries
- 2 oz. goat cheese
- 2 tbsp. pepitas

Directions
- Preheat the oven to 400° F.
- Wrap each beet in foil and bake for 45-50 minutes, until they are fork-tender. Let cool.
- Assemble the salad by placing a bed of spinach into two bowls, top with sliced beets, blueberries, crumbled goat cheese, and pepitas. Drizzle with Organicville® Balsamic with Olive Oil Vinaigrette.
